Hello everyone! Yesterday was Easter and I made this wonderful recipe for dinner to share with family and friends. It is just too good not to share with all of you too! I come from a big Italian family so growing up I ate pasta at least twice a week. How can one give up pasta? Grab yourself a spiralizer! It will help your transition into a healthier lifestyle with ease, promise! These are zucchini noodles but you can use a variety of different vegetables, cucumber is great too! Enjoy my loves!
- 6 Zucchinis
- 2 Mangos (diced)
- 2 Celery Stalks (sliced)
- 1/2 lb Strawberries (chopped)
- 2 Mangos
- 1/2 Avocado
- 1 – 2 Tablespoons Fresh Lime Juice
- Spiralize zucchinis and place into a bowl with the remaining ingredients.
- Blend all the sauce ingredients, mix into bowl and ENJOY! Xx
