Enjoy your garden vegetables this summer with some Asian-inspired flare!  I created this blog to give you healthy, simple and delicious recipes that don’t take much time to make so you and your family can spend more time together bonding over meals.  This recipe is definitely a winner and all the veggies will have you feeling harmonious on all planes!  The meat of the young thai coconut also gives the dressing a rich, creamy texture (like avocado) that will make your inner child sing, smile and do a happy dance!

If you are ready to take the leap into becoming a new, awakened you and raise your awareness, plants are a great way to start!  They vibrate at such a high frequency that your body has no other choice but to elevate your vibrational patterns.  Plants are a portal into higher frequencies and new realms of life.  Plants are TRANSFORMATIONAL!  You also develop a strong(er) connection with Gaia and all those in nature when you seek to ascend your level of understanding.  We are all made from the same fabric as the universe, and this oneness fills your soul which can be felt throughout your entire body.

I want this blog to be not only a source of inspiration for healthier eating, but also a place where you can come and learn information about the nutritional aspects of raw food.  Sharing information about our overall health is a passion of mine because everyone can benefit from learning more about the “science” behind healing themselves.  I love learning as much as I can about everything that goes on within the body and sharing it with all of you!  Nutrition plays a critical role in our well-being; spiritually, physically, emotionally and mentally.  It is in a sense, a code, a language that speaks to your body to utilize what is consumed.  When the chemistry is balanced, it works together in harmony.   We want harmony in the body.  Learning to listen to your body and about its needs is crucial to heal.  You are honoring yourself when you take the time to love yourself enough to make positive changes in your health.  Your health is the key to living life prosperously here on Earth.

Now lets get to the nutrition behind the main star in this dish, coconut meat!  Coconut meat gets a bad reputation due its its fat content but it is truly wonderful and helps to restore oxidative tissue damage.  For example, raw vegan infants and toddlers need a source of healthy fats for proper brain development and coconut meat provides that source.  It has zero cholesterol, contains proteins, healthy fats, and various vitamins and minerals.  Coconut meat is also an excellent source of manganese, just one cup of coconut meat provides woman 67 percent of the recommended daily amount and 52 percent for men.  Manganese promotes stabilized blood sugar levels, proper enzyme functioning, healing wounds, absorption of other nutrients such as iron, thiamine and vitamin E and most importantly, supports both the immune and nervous systems.  It is such an important nutrient for your health!  If you are going through any spiritual ascension, manganese is going to help ground you because it deals with the nervous system offsets the intense energy flowing through you.  Vitamin B6 (a water soluble vitamin) is also found in coconut meat and it aids in balancing the nervous and immune systems.

Coconut meat also supplies a significant amount of potassium and copper.  Potassium, along with sodium, is essential for proper fluid balance within your cells.  It is also necessary for proper heart function and muscle growth. Copper is important to build strong tissues, produce red blood cells for proper growth, has anti-inflammatory properties and produces and maintains energy in the cells.

Serves 1-2


  • 4 Zucchinis (Spiralized and save each end bit after spiralizing to place in dressing)
  • 4 Carrots (peeled and julienned)
  • 2 Scallions (slice green parts only and save white parts for dressing)
  • 1 -2 Baby Bok Choys (sliced)
  • 1/2 Head Kale (sliced)
  • 1 Cup Broccili (chopped)
  • 1 Yellow Bell Pepper (diced)
  1. Place all ingredients into a large bowl.


  • Meat of one Young Thai Coconut
  • 2 Medjool Dates (soak if not fresh)
  • 2 Scallions (white parts only)
  • 1 Celery Stalk
  • 1 Lemon (Juiced)
  • 1/4 cup Dried Mango (soaked until soft about 15 minutes)
  • A thumb of Ginger or more to taste
  1. Blend all ingredients together.
  2. Pour as much or as little onto the base salad, mix and ENJOY! Xx
