Peace, Love & Happiness with Strawberry Coconut Cream

Hello Everyone!  Summer is officially here and what better way to celebrate than by sharing the joy of berry season with the ones you love!  I am just head-over-heels for this time of the year.  Getting together with friends and family for outside gatherings in the  sun creates some of the best memories.  As you all know, I am a huge fruit gal.  Every time I see my Godson Joey he says, “Aunt Jenna, you’re the fruit lady!”  It definitely  brings a HUGE smile to my face.  I love to use Driscoll’s organic berries in all different ways, I even made a delicious Coconut Strawberry Cream dipping sauce that will go perfect with all your fruit – and it is kid-approved!  It’s perfect for parties and sharing.

I partnered up with Driscoll’s on this blog post to spread the love of Food Art by creating these #pictureperfectplates that are wonderful for parties and sharing.  I always have so much fun making these pieces and people will appreciate all the work you put into them.  They are great to display on party tables and to pair with a cream sauce recipe you can find below.  For this project, I created 3 different artworks with the theme of “Peace, Love & Happiness.”

I can remember back in the 5th grade I was already drawn to peace and love.  I had a lava lamp, bell bottoms, platform shoes, flowers all over my walls, groovy patches on my backpack; even all my doodles would incorporate “Peace + Love = Happiness.”   It’s pretty amazing how everything comes full circle.  The peace and love one feels for oneself, all living beings and the planet truly does equal happiness.  The energy of the soul is peaceful, loving and joyful.  Your inner peace is the highest form of wealth and when we are at peace with ourselves, it will open up the heart.  Love is our truest nature and that is why it feels so good.  The sense of wholeness, completeness, comfort and even euphoria fills your entire being.  Love aligns us with who we are and when we are aligned, the river of joy to the cosmic ocean is forever ours.  The happiness from within expands to every being around us as we illuminate.  Happiness is finding the joy in life.  If is doesn’t bring you joy, then why are you doing it? ????

Offer the gift of peace and harmony to the ones you love at your next meal.  The smallest gesture, like sharing food that nourishes the soul, will be felt by everyone in your presence.  Peace comes from within and you can express your peace through your food with creativity.

Feed your body the food that loves you back!  Berries are powerful antioxidants that help fight free-radicals, inflammation and keep your cells healthy.  Our bodies make new cells from the food we eat, what you eat literally becomes YOU!  Share your heart and love at your next party or event.

  • The Meat of 1 Young Thai Coconut
  • 5-6 Medjool Dates (pitted)
  • 5-6 Driscoll’s Organic Strawberries
  • 2 Teaspoons Lucuma
  • 1/2 Teaspoon Vanilla Bean Power
  • Water from 1 Young Thai Coconut for blending

Optional:  Vanilla Bean Powder

  1. Blend all ingredients together in a high speed blender adding enough water for your person desired consistency.  It’s that simple and ENJOY!! Xx
