Curry, Turmeric Turnip Soup

In Appetizers & Entrees, Recipes by Jenna Davila

Hello beautiful one! I have been getting an insane amount of turnips from my local organic CSA that I honestly had no idea what to do with all of them. It’s recommended to slice them thin and eat them raw but I’m not really a fan so I tried roasting them with some carrots, a little bit of coconut oil and some fresh thyme but to me, they were kinda bitter. One weekend, my friend Jess was visiting me and said she loves making turnip soup so we created this delicious, nourishing soup together. The bitterness in them totally goes away and become way more enjoyable to eat which I was super happy about! We added a variety of flavors to this dish and it is excellent! We both loved it so much we ended up eating it the next day too! This recipe it really great when you’re craving something warm or to help you during cold and flu season. I hope you enjoy it as much as well did! 😀 ❤
