BBQ Tempeh Kale Salad

This BBQ Tempeh Kale salad is the perfect protein packed meal. It’s hearty, delicious and incredibly nutritious. It is a quick and easy meal to make and great for the summer with its fresh peaches!

Recipe

  • Baked Tofu

    • Extra Firm Tofu (cut into cubes)
    • 3 Tablespoons BBQ sauce

    Bowl

    • ¼ Cup Quinoa rinsed and cooked according to the package.
    • 2 Cups of shredded Kale
    • 1 Peach (sliced)
    • 1 Avocado (diced)
    • Handful Peruvian Peppers or any pepper of choice 
    • 1 Lemon

    Place diced tofu into a container with BBQ sauce and shake until coat and place into the refrigerator for 1 hour mixing a couple times throughout.
