Curry, Turmeric Turnip Soup

Hello beautiful one! I have been getting an insane amount of turnips from my local organic CSA that I honestly had no idea what to do with all of them. It’s recommended to slice them thin and eat them raw but I’m not really a fan so I tried roasting them with some carrots, a little bit of coconut oil and some fresh thyme but to me, they were kinda bitter. One weekend, my friend Jess was visiting me and said she loves making turnip soup so we created this delicious, nourishing soup together. The bitterness in them totally goes away and become way more enjoyable to eat which I was super happy about! We added a variety of flavors to this dish and it is excellent! We both loved it so much we ended up eating it the next day too! This recipe it really great when you’re craving something warm or to help you during cold and flu season. Recipe

Serves 2-3
  • 1 rounded teaspoon of Coconut Oil
  • 1 Onion (diced)
  • 3 Garlic Cloves (minced)
  • 4 large Carrots (julienne)
  • 4 Turnips (quartered and thinly sliced)
  • 3 Celery Stalks (sliced)
  • 1 medium sized Sweet Potato (diced)
  • 6 cups of Anthony William’s Healing Broth
  • 4 cups of filtered Water
  • 1 1/2 teaspoon Curry Powder
  • 1 1/2 teaspoon Turmeric
  • 2 teaspoons Cumin
  • 1 tsp Rosemary
  • 1/2 teaspoon OG Adobo
  • 1/2 teaspoon Red Pepper Flakes
  • 2 drops Lemongrass Essential Oils
  • 2 Bay Leaves
  • 10 sprigs of Thyme
Garnish:
Parley
Broccoli Sprouts

Parmesan Cheese (see below for recipe)

SOUP

  1. Heat a large soup pot and add coconut oil to the pot.  Once melted,  add in onions on medium heat.  Stir occasionally and cook for 7 min.
  2. Add garlic cook for 2 minutes stirring occasionally.
  3. Add celery cook for 3 min.
  4. Add 6 cups of healing broth, 4 cups of water, sweet potato, turnips, carrots and the remaining ingredients.
  5. Bring to a boil then cook on a simmer for 1 hour.
  6. Top with garnishes and ENJOY!!Xx

Parmesan Cheese

  • 1/4 cup Cashews
  • 1 Tablespoon of Nutritional Yeast
  1. Place all the into a blend and pluses several times until a parmesan cheese like texture is acquired.   If you can double the cheese to make more 🙂
