Filling:
- 1 Cucumber Finely Diced
- 1 Avocado Diced
- 4 Radishes Finely Diced
- 6 Strawberries Diced
- ¼ Cup Red Onion Finely Chopped
- ½ Cup Pomegranate Seeds
- 1 Handful of Pinenuts
- 1 Handful of Chopped Cilantro
- 1 Lime Juiced
Options: ½ bunch of dinosaur kale, another avocado or 1 cooked sweet potato. For the sweet potato, prick with a fork several times. Line a small pan with parament paper and add enough water to the pan to cover the bottom if you wan to keep it oil free. Simply bake at 425 for 40-45 minutes until soft.
