Holiday Salad 3 Ways

One of the most delicious stuffed salads ever! These are perfect for the holiday season and you will love these so much they will be on your meal plan rotation for weeks to come. The fun thing about these ingredients is that you can play around with them and make them 3 ways as avocado boats, kale boats or do a cooked version with sweet potato. They are so easy to make, flavorful, healthy and full of nutrition your body will love!

Recipe

Filling:

  • 1 Cucumber Finely Diced
  • 1 Avocado Diced
  • 4 Radishes Finely Diced
  • 6 Strawberries Diced
  • ¼ Cup Red Onion Finely Chopped
  • ½ Cup Pomegranate Seeds
  • 1 Handful of Pinenuts
  • 1 Handful of Chopped Cilantro
  • 1 Lime Juiced

Options: ½ bunch of dinosaur kale,  another avocado or  1 cooked sweet potato. For the sweet potato, prick with a fork several times.  Line a small pan with parament paper and add enough water to the pan to cover the bottom if you wan to keep it oil free. Simply bake at 425 for 40-45 minutes until soft.

Gently mix all filling ingredients together in a large bowl. Scoop filling into kale, avocado or cooked sweet potato and ENJOY! XX
