Ahh just one of the many many things I love about raw foods, the COLORS! So bright, vivid and full of life and nutrients! What’s not to love? These little parfaits are made with pitaya (aka red dragon fruit), which gives them that gorgeus magenta color. For this recipe I used Pitaya Plus, which is an organic raw vegan frozen dragon fruit packet. This has been a wonderful fruit to add into my smoothies and desserts. This superfood is jam packed with antioxidants to help offset and fight free radicals that can cause damage to your cells. You can get 150% of your vitamin C in one packet of Pitaya Plus! It is also a good source of fiber, magnesium and B vitamins.

Yields 2-4 Parfaits

Crust

  • 1 Cup Dried Mulberries (10% off Sunfood)
  • 4 Dates
  • 1 – 1 1/2 Teaspoons Cinnamon

Layer

  • 1 lb of Strawberries (sliced)
  • 1/2 Cup Blueberries

Filling

  • 5 Bananas (3 Frozen)
  • 1 Packet of Pitaya Plus
  • 1/2 Cup Blueberries
  • 2 Dates
  • 1 Teaspoon Vanilla Bean Powder (10% off Sunfood)
  • 1 Teaspoon Lucuma Powder (10% off Sunfood)
  1. In a food processor, pulse the crust ingredients together until a crumble texture is achieved.
  2. Pack the crust in the bottom of a glass of your choosing.
  3. Add sliced strawberries and blueberries in the glass.
  4. Blend all the filling ingredients in a high speed blender and pour into glass.
  5. Top with blueberries, strawberries and more mulberries.  Enjoy! Xx
