Soursop Parfait with Chia Seed Pudding

This tropical parfait contains soursop fruit which tastes just like a sweet and tarty rainbow sherbet, delicious! My husband and I split these two bites of heaven for breakfast, so good! While there are claims that soursop has cancer fighting health benefits, it is suggested to only have a some amount at time. Make sure you remove ALL seeds. I am still in Puerto Rico so I quickly want to get this recipe to you! Enjoy! Xx

2 Servings

Pudding

  • 1 Ripe Banana
  • 4 Tablespoons Chia Seeds
  • 1/2 Cup Almond Milk (recipe here)
  1. Mash the banana in a small bowl.
  2. Stir in chia seeds
  3. Slowly stir in almond milk.
  4. Place into the refrigerator for 30 minutes or longer stirring once.  I like to make this the night before so I have it done in the morning for breakfast 😉

Parfait 

  • 1/2 Cup Soursop
  • 1 Ripe Banana
  • 2 Cups Papaya (diced)
  • 1 Cup Mixed Frozen Berries
  1. Blend the soursop and banana together.
  2. Layer a cup with the soursop, chia seed pudding and fruit.  YUM! ❤
