Now lets get to the nutrition behind the main star in this dish, coconut meat! Coconut meat gets a bad reputation due its its fat content but it is truly wonderful and helps to restore oxidative tissue damage. For example, raw vegan infants and toddlers need a source of healthy fats for proper brain development and coconut meat provides that source. It has zero cholesterol, contains proteins, healthy fats, and various vitamins and minerals. Coconut meat is also an excellent source of manganese, just one cup of coconut meat provides woman 67 percent of the recommended daily amount and 52 percent for men. Manganese promotes stabilized blood sugar levels, proper enzyme functioning, healing wounds, absorption of other nutrients such as iron, thiamine and vitamin E and most importantly, supports both the immune and nervous systems. It is such an important nutrient for your health! Serves 1-2
Base
- 4 Zucchinis (Spiralized and save each end bit after spiralizing to place in dressing)
- 4 Carrots (peeled and julienned)
- 2 Scallions (slice green parts only and save white parts for dressing)
- 1 -2 Baby Bok Choys (sliced)
- 1/2 Head Kale (sliced)
- 1 Cup Broccili (chopped)
- 1 Yellow Bell Pepper (diced)
- Place all ingredients into a large bowl.
Dressing
- Meat of one Young Thai Coconut
- 2 Medjool Dates (soak if not fresh)
- 2 Scallions (white parts only)
- 1 Celery Stalk
- 1 Lemon (Juiced)
- 1/4 cup Dried Mango (soaked until soft about 15 minutes)
- A thumb of Ginger or more to taste
- Blend all ingredients together.
- Pour as much or as little onto the base salad, mix and ENJOY! Xx
