Autumn Power Bowl

Try this super nutritious autumn power bowl for your next meal! It has all my favorite goodies for a balanced dish🌿❤️


  • 3 Carrots (diced)
  • 1 Beets (diced)
  • 1 Head Broccoli (cut into florets)
  • 1 Red Bell Pepper (diced)
  • 3 Dates (sliced)
  • 1 Bunch Dinosaur Kale (destemmed and shredded) 
  • 2 teaspoons Cumin
  • ¼ Teaspoon Coriander
  • ¼ Teaspoon Garlic powder


  • 2 Tablespoons tahini
  • ¼ Turmeric powder
  • ½ Tablespoon Lemon
  • Water to blend

Toss beets and carrots together in a small bowl with a splash of oil olive, cumin, coriander and garlic powder.  Bake on 425 for 30 minutes on a lined baking sheet.  Halfway through, toss and add red bell peppers and broccoli to the sheet and cook for the remaining 15 minutes.

While the veggies are baking, make the dressing.  Mixing all the ingredients  into a small bowl and add water as need.  Massage kale for 1 minute and add as much dressing as desired. 

Add kale, veggies and dates into a bowl and ENJOY! Xx
